The 2021 Big Bad Wolf is the third BBW. Cabernet Sauvignon, Merlot and Shiraz were fermented and matured separately before being blended to make this wine. The wine is balanced and refined and has lifted plum and dark fruit flavours. The Cabernet component comes from the Boree Lane vineyard, the Merlot from Carillion across the lane and the Shiraz from Strawhouse. Picked in the second week of April, the wine was destemmed, cold soaked and fermented on skins for a total of 16 days, fermenting dry before pressing to barrel.The wine spent 12 months in barrel with 30% new, all French - our typical approach.
