The 2022 Big Bad Wolf has Cabernet Sauvignon and Shiraz as the backbone of the wine, with Merlot rounding out this classic Australian blend. The individual batches were fermented and matured separately before being blended. The wine is balanced and refined and has lifted plum and dark fruit flavours. The Cabernet component comes from the Boree Lane vineyard, Shiraz from Strawhouse and the Merlot from Carillion across the lane. Picked in late April, the wine was destemmed, cold soaked and fermented on skins for a total of 15 days, fermenting dry before pressing to barrel. The wine spent 12 months in older French oak barrels.
